Slimming World Curry

I have done the Slimming World 'diet' program a few times in the past and when I have done it it had worked well for me, my problem is keeping it up. One thing I have always kept up is buying the monthly magazines because they have some brilliant recipes and as I am starting it all over again on Thursday I wanted to share with you a really great recipe for a curry.

Lamb Korai

Serves 4      Syns per serving - Extra Easy Free (curry only)
Fry Light
3 onions, finely chopped
4 tsp medium curry powder
2 green chillies halved
3 cloves of garlic chopped finely
thumb sized piece of ginger finely chopped
4 tomatoes roughly chopped
500g lamb leg steaks with all visible fat removed and cut into bite size chunks
450ml lamb stock
2 green peppers cut into bite sized pieces
250g chestnut mushrooms quartered
salt and pepper


1.  Preheat your oven to 180°C/fan 160°C/gas 4 if you are using a casserole dish or like me you could use a slow cooker. Spray the pan with fry light and add the onions and stir-fry  on low for 10 minutes or until softened, but not coloured.

2.  Stir in the curry powder, chillies, garlic and ginger and cook for 1 minute. Turn the heat up to medium, add tomatoes and cook, stiring for 4-5 minutes or until the liquid has evaporated.
3.  Add the lamb and cook, stirring for 5-10 minutes until browned. Add the stock, bring to the boil then add the peppers and the mushrooms then season. Cover with a lid or foil and cook in the oven for 45 minutes ot until the lamb is tender.
4.  I served with boil in the bag basmati rice and poppadoms which I cooked in the microwave as a healthier option. Buy uncooked poppadoms and cook in the highest setting in the microwave for 45 seconds they taste delicious they are crisp and toasty. Plus they are only 1.5 syns
